Chocolate Pomegranate Brownies

Ingredients
  

  • 1 cup Almond Milk plus 2 tbsp
  • 1/2 cup Olive Oil plus 3 tbsp
  • 1 tbsp Pure Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1 cup Cacao unsweetened
  • 1/4 tsp Salt plus 1/8 tsp
  • 1/2 tsp Baking Powder
  • 1/2 cup Coconut Sugar
  • 1/2 cup Unrefined Sugar
  • 2 tbsp Cornstarch  loosely packed
  • 2/3 cup Chocolate Chips
  • 1/4 cup pomegranate seeds

Method
 

  1. Preheat the oven to 180 degrees C.
  2. Lightly grease a 20 cm x 30 cm baking tray.
  3. In a large bowl stir together the flour, sugars, cocoa powder, baking powder salt, and cornstarch. Pour in almond milk, olive oil, vanilla, and chocolate chips; mix until well blended.
  4. Spread evenly in a baking tray and sprinkle in pomegranate seeds.
  5. Bake for 25 to 30 minutes in the preheated oven until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.
