Peanut Butter Blueberry Oat Bars

I absolutely loved peanut butter, honey and jam sandwiches growing up and I wanted to recreate a dessert that would taste just as great. I made these killer peanut butter blueberry oat bars after a tough bootcamp class at SWAT over the weekend. I didn’t have loads of energy, so the fact that these bars were quite simple to make was fantastic. They also ended up being taste approved by 4 guests I had over throughout the day, so you know they’re bound to taste as good as they look. photo 2(4)

Peanut Butter Blueberry Oat Bars
 
Ingredients
  • 2¼ cups gluten free oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 medium ripe bananas
  • 2 teaspoons pure vanilla extract
  • ¼ cup peanut butter
  • ¼ cup unsweetened applesauce
  • ¼ cup honey
  • For peanut butter drizzle:
  • 4 tablespoons peanut butter
  • 1 tablespoon honey
  • 3 tablespoons blueberry jam (or any other type of jam)
Instructions
  1. Preheat oven to 350 degrees F. Spray or line 9×9 inch baking pan with nonstick cooking spray/ paper.
  2. Place oats into blender or food processor and blend for 1-2 minutes you want to make sure that the oatmeal resemble flour.
  3. Transfer oat flour mixture to medium sized bowl; whisk in baking powder, baking soda, salt and cinnamon; set aside.
  4. Place bananas, vanilla, applesauce, and honey into blender; blend 1-2 minutes or until smooth and creamy. Add to oat flour mixture and mix together until just combined.
  5. Gently fold in ¼ cup of peanut butter. Pour batter into prepared pan, spreading evenly with rubber spatula. Bake for 15 minutes or until knife inserted into center comes out clean or with just a few crumbs attached. Cool 10-15 minutes on wire rack.
  6. Prepare drizzle by mixing 4 tablespoons of peanut butter and honey in bowl; stir well to combine then drizzle over the top of bars with the jam as well. Cut bars into squares and enjoy!
