Chocolate Quinoa Coconut Granola

Granola is one of those essential staples. It is an easy, tasty, and versatile good-for-you breakfast. While store-bought granola is full of sugars and fats, homemade granola allows you to monitor what is going into your breakfast bowl. The other day, I was set on creating a new chocolate quinoa coconut bar, despite failing to do so.. I ended up with this deliciously tasty granola. There are times when recipes don’t exactly work out the way you want them too, but luckily with this one the granola was a fantastic alternative!

Chocolate Quinoa Coconut Granola
 
Ingredients
  • 2 cups gluten-free oats
  • 1 cup quinoa flakes
  • ½ Cup coconut flakes
  • 6 tbsp coconut oil (melted)
  • 2 tbsp. coconut butter (melted)
  • 4 tbsp. cacao
  • ¼ cup dried blue blueberries
  • ⅓ cup chocolate chips
  • ¼ cup maple syrup
  • 1 cup cooked quinoa
  • ¼ cup pistachios
  • ¼ dried cranberries
  • 1 tbsp. cinnamon
Instructions
  1. Mix wet and dry ingredients and place on a cookie sheet. Bake in a 375 F oven for 24 minutes (or until fragrant and golden), stirring every 8 minutes.
  2. Once the granola is cool add dried fruit, coconut flakes and chocolate. Store in airtight container.
