Kale and Cauliflower Curry

I’ve made this roasted cauliflower curry countless times and I still can’t believe this was my first time to think of adding kale into the mix.  This slightly spicy, warm curry is softened by the pleasing sweetness of coconut oil. I truly love the abundance of flavor this dish has, and I think you will as well : )photo 2(1)
