Quinoa Apple and Avocado Salad

I’m a big fan of power salads, especially this quinoa apple and avocado salad I made just the other day.  It was very simple to prepare and packed with all sorts of goodness. I’m always looking for quick, healthy, and filling lunches to bring to work and this guy does all three! Feel free to sub any ingredients as needed. My favourite dressing to use is balsamic!photo 2

Quinoa Apple and Avocado Salad
 
Ingredients
  • 2 cups mixed greens
  • 1 medium organic apple, chopped
  • 1 avocado, sliced
  • ¾ cup quinoa, cooked
  • 4 tomatoes, diced
  • ¼ cup sharp cheddar cheese, diced
  • ¼ cup sprouts
  • ¼ almonds, chopped
  • 2 tbsp hemp seeds
Instructions
  1. Dice and chop up apple, avocado, tomatoes, cheese, and almonds. Combine all ingredients together in a large bowl. Drizzle dressing on top and mix.
