Sweet Potato Morning Loaf

This sweet potato morning loaf recipe was inspired by my Saturday morning trip to Terra’s winter market last Saturday. After playing around with a couple different recipe ideas, I finally found the perfect combination for a delicious gluten-free loaf. The sugar icing on top is not necessary, but always a tasty idea. My whole family was quite impressed with how it turned out.  photo 1

Sweet Potato Morning Loaf
  • 1 mashed banana
  • 2 medium sweet potatoes
  • 2 eggs
  • ⅓ cup coconut oil (melted)
  • ½ cup brown sugar
  • ⅓ cup coconut sugar
  • ½ cup rice flour
  • ½ cup corn flour
  • ½ cup almond meal / flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • About a tablespoon of cinnamon
  • Teaspoon of nutmeg
  1. Preheat oven to 350 degrees.
  2. Boiled hot water and dice up sweet potatoes, throw them in the water and cook until softened.
  3. In a medium sized bowl mix in dry ingredients to wet including mashed sweet potatoes. Make sure to stir to good consistency.
  4. Pour in baking pan, cook for 35-40 mins depending on oven.
