rvsFriday evening I was invited to a lovely little potluck dinner. After baking all day I decided to throw together this quick roasted vegetable salad with ingredients I had left over from shopping early on in the week. I wasn’t sure how everything would taste, but once combined together with the apple cider vinaigrette dressing the results were fantastic. I even made the salad again for lunch today!winterkalesalad

Roasted Winter Vegetable Salad
Serves: 5
 
Ingredients
  • 1 bunch lacinato kale, washed and chopped
  • 1 bunch mixed salad greens
  • 1 gala apple, washed and diced
  • ½ cup goat cheese
  • ¾ cup tomatoes (of your choosing*)
  • salt & pepper
  • Roasted Sweet Potato
  • 2 sweet potatoes, diced in ½ inch cubes
  • 2 tbsp coconut oil
  • salt & pepper
  • Candied Pecans
  • 1 cup sugar
  • ½ cup water
  • 1 tbsp ground cinnamon
  • 2 cups whole, roasted pecans
  • Dressing
  • ¾ cup olive oil (good quality)
  • ¼ cup apple cider vinegar
  • 2 tablespoons water
  • 2 tablespoons honey
  • 1½ teaspoons salt
  • ¼ teaspoon pepper
Instructions
  1. To make sweet potatoes:
  2. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Place the diced sweet potatoes on the baking sheet and drizzle with two teaspoons coconut oil and salt and pepper. Toss to coat. Place in the oven to roast for about 30 minutes, tossing halfway through. When sweet potatoes have finished roasting, remove from the oven and let cool.
  3. To make candied pecans:
  4. Combine sugar, water, and cinnamon in a saucepan over medium heat, and
  5. bring to a boil.
  6. When the sugar has dissolved and the syrup begins to bubble, add the almonds
  7. and stir to coat evenly. Continuing stirring until all of the sugar has crystallized on the nuts.
  8. Pour the almonds onto a baking sheet lined with parchment paper. Separate almonds using forks.
  9. Allow to cool thoroughly
  10. To make apple cider vinaigrette dressing:
  11. Combine vinegar, water, honey, salt and pepper in a blender.
  12. Drizzle olive oil into blender until combined.
  13. To assemble the salad:
  14. Mix chopped kale and salad greens in one large bowl. Top with roasted sweet potatoes, diced apples, tomatoes, candied pecans and goat cheese. Mix salad well and drizzle dressing over it.
