Hazelnut Energy Balls

It’s Friday! We made it! I think we should celebrate with something sweet. Something with chocolate and hazelnuts that tastes decadent, but is perfectly acceptable for breakfast. Hazelnut Energy Balls
 
A little pick me up for the end of your week. These hazelnut energy balls are both raw & vegan!
Ingredients
  • 1-1/4 cup hazelnuts
  • 1-1/4 cup almonds
  • 2 cups dates, soaked in water for 20-30 minutes to soften
  • 1 tsp pure vanilla extract
  • 1 Tbsp honey
  • 2 Tbsp water
  • ½ cup cocoa powder
  • ¼ cup crushed pistachios
  • ¼ cup shredded coconut
Instructions
  1. In a food processor, very-finely chop the hazelnuts and the almonds.
  2. Drain the dates and add them to the food processor. Process until they are finely chopped.
  3. Add the vanilla extract, the honey, cocoa powder, and water and process until all of the ingredients are well-combined and start to stick together.
  4. Roll mixture in to small circular balls, coating them in crushed pistachios, shredded coconut, nuts, or whatever you see fit. Transfer the balls to a parchment-lined tray. Refrigerate for 30-ish minutes before eating.
