bsmI know, this recipe is long overdue.. but between my exams, holiday shopping and working at the Flower Place I haven’t had a lot of time to keep up with my postings. Luckily, I have a week off starting Friday so everything should be up to date by the weekend :) Below is a delicious Butternut Squash Macaroni recipe I found on Oh She Glows , which happens to be Vegan! I also decided to use Gluten-Free macaroni but whole wheat will suffice.

butternutsquashmacaroni*If you have left overs* I would highly recommend  keeping the sauce separate from the macaroni as it will soak up the tasty butternut flavour.

Butternut Squash Macaroni
Serves: 4
 
Ingredients
  • 1 cup fresh butternut squash peeled and chopped
  • Extra virgin olive oil
  • 1 tbsp Earth Balance
  • ¾ cup Almond milk *unsweetened & unflavoured
  • 1 tbsp Cornstarch
  • 6 tbsp nutritional yeast, or more to taste
  • 2 tsp Dijon mustard
  • ¾ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp fresh lemon juice
  • ¾ tsp kosher salt & ground black pepper
  • 4 servings gluten-free macaroni
  • 1 cup steamed kale or spinach
  • ½ cup broccoli
Instructions
  1. Preheat oven to 425F. Line a casserole dish with tin foil. Mix chopped squash with olive oil, salt & pepper. Roast for about 40 minutes, uncovered, or until tender.
  2. Meanwhile, prepare the sauce in a pot on the stove top. Add Earth balance over low-medium heat. In a bowl, whisk together milk and cornstarch until clumps are gone. Add into pot and whisk. Stir in remaining ingredients (nutritional yeast, Dijon, garlic, lemon, Salt & Pepper) and whisk over low heat until thickened.
  3. Cook your pasta according to package directions. The sauce makes enough to cover 4 servings of pasta.
  4. In a blender, blend the sauce with 1 cup of roasted squash.
  5. Add cooked, drained, and rinsed macaroni into pot, along with sauce & greens.
