Cinnamon Coffee Cake

I have come to the ultimate conclusion besides making delicious smoothies.. cakes easily are number one on my list. I’m sure my boyfriend would love to argue the fact that I love baking sweets in general but I would have to say cakes truly take it. This time around I decided to bake a classic cinnamon coffee cake for my sisters welcome home dinner. She spent three weeks up in northern Ontario and I figured she would appreciate a warm tasty cake upon her return. Below is the creation, I hope you enjoy!


Cinnamon Coffee Cake
Serves: 8-10
  • Batter:
  • ½ cup shortening
  • 2 cups flour
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream
  • Topping:
  • 1 cup chopped walnuts
  • ⅓ cup melted butter
  • ⅓ cup white sugar
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  1. Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
  2. Mix topping ingredients, set aside.
  3. Cream shortening and sugar in mixing bowl add eggs and vanilla.
  4. Sift flour, baking powder, and salt.
  5. Add baking soda to the sour cream.
  6. Slowly add flour mixture to the creamed shortening in bowl alternately with the sour cream until all combined.
  7. Spread ½ the topping in bottom of well buttered tube pan.
  8. Spoon ½ batter over top.
  9. Sprinkle remainder of topping over batter and then rest of batter.
  10. Bake for 40-45 minutes
