Raw Blonde Macaroons

After biting into my first  ever raw blonde macaroon at Rawlicious restaurant in Toronto I was instantly hooked.  I cannot even begin to tell you how obsessed I am with this delicious treat. Two trial runs later.. and I’m finally ready to share with you all this special recipe. For the record, the chocolate coating is optional as these girls taste great on their own!


Raw Blonde Macaroons
  • Macaroons:
  • 1 cup cashews
  • ½ cup coconut oil
  • 2 cups shredded unsweetened coconut
  • ¾ cup pure maple syrup
  • 1¼ tsp vanilla extract
  • pinch of fine sea salt
  • Chocolate coating :
  • 100g chocolate (I love Green and Black's organic dark chocolate)
  • 1 tablespoon coconut butter
  1. Put the cashews in a food processor and grind until powdery.
  2. Add the remaining ingredients and mix until incorporated.
  3. Make macaroons by pressing into a tablespoons or roll them into balls.
  4. Place on baking sheet and refrigerate for 1 hour.
  5. Melt chocolate and coconut butter together and dip macaroons into the sauce.
  6. Store in the refrigerator in an air tight container.
