Sour Cream Banana Cake

This right here is a “Mitchell” Family classic dessert. From ever since I could remember, my mom has been baking this delicious Sour Cream Banana Cake. The recipe has been taken straight out of the original “Second Helpings” cook book; a staple in my household growing up. Despite trying numerous other banana cake recipes this one still is the winner. Usually, I never end up make an icing but figured I would add one to make this birthday an extra special one. I whipped up a  basic vanilla icing but feel free to substitute with your own.bananacake

Banana Cake
  • ½ cup soft butter
  • 1¼ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1½ cup flour
  • ¼ cup sour cream
  • 1 cup mashed ripe bananas
  • ¼ tsp salt
  1. Beat butter, sugar, eggs and vanilla until light and fluffy.
  2. Dissolve baking soda in sour cream, add to batter and beat well.
  3. Add bananas alternatively with dry ingredients, mix just until blended.
  4. Pour into two prepared circular baking pans.
  5. Bake at 350 F for 35-40 minutes or until golden brown. Ice with what ever icing you choose

    There’s no flour in the recipe!!!i looked in the book and it calls for 1 and 1/2 cups!
